like a true housewife

I don't usually post recipes {recipe posts are boring?}, but people keep asking me for the new recipes I tried this weekend, so for your personal enjoyment and future caloric consumption, here are three recipes I made this weekend:


1. Lemon garlic spaghetti


This one tasted like something you would order at Olive Garden. Here's the recipe, which I adapted from here


8 oz dry spaghetti
1/2 cup grated parmesan cheese
3 tsp olive oil
2 cloves garlic 
1 lemon
6-7 basil leaves {the recipe said to chiffonade them (????) but I just kind of broke them into smallish pieces and called it good. let's not get too ambitious here, people.}



Stir the chopped garlic in the olive oil until the garlic is just barely starting to brown. Remove from heat immediately. Cook up the dry spaghetti while you're doing this.


Mix together the garlic oil {garlic chunks and all}, parmesan, basil, and lemon juice in a bowl. Pour in the cooked spaghetti and mix it all together.

This is one of those recipes where you don't have to be precise. More garlic and less lemon than you think. 

I even made up some garlic chicken to add to husband's portion. {Apparently everyone didn't grow up in liberal Oregon where vegetarian meals are the norm? And healthy for you and all that stuff?}



2. Orange Chicken

This recipe was supposed to be a Panda Express orange chicken knockoff. It was delicious, don't get me wrong, but didn't really taste like Panda's chicken to me. Nonetheless, we liked it, so here's the link:


And now, lest we forget about the most important part.... DESSERT!

3. Rolo Cookies

I originally found this recipe on pinterest, but I feel I can claim it as my own since I've changed one of the only four ingredients. 

5 small packages of Rolo's
1 box german chocolate cake mix
2 eggs
1/3 cup oil

Mix cake mix, eggs and oil. Mold a small amount of dough around each rolo and place on a greased cookie sheet. Bake at 350 for 7-8 minutes {don't overbake! they should be gooey!}.

Two important notes about these cookies:

1. The original recipe suggests sprinkling powdered sugar on top. I personally am incapable of eating sprinkled powdered sugar without choking and turning red in the face and crying huge streaks of makeup down my face and spewing a powdery drooly mess in someone's face. Ergo {Latin}, I forego the powdered sugar. But if you're one of THOSE people, by all means, go ahead. Sprinkle that powdered sugar. Eat it daintily at parties.  Look cute. Keep your mascara intact. Taunt those less fortunate in the powdered sugar business.

2. If I were on Miss America, I would skip the whole world peace thing and wish that nobody would ever over bake their cookies again. Please, dear readers, lay down your hardened souls and hardened cookies. Don't over bake. Soft and gooey cookies equal a beautiful world.
